Serves: 4 people | Prep Time: 15 minutes | Cook Time: 18–20 minutes

Ingredients for the Salmon:

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • Lemon slices for serving

Ingredients for the Lemon Butter Sauce:

  • 80g butter
  • 3 garlic cloves, finely chopped
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon honey (optional for balance)

Method

Step 1: Prepare the Oven

Preheat your oven to 200°C.
Lightly grease a baking dish or line it with baking paper.

Step 2: Season the Salmon

Pat the salmon fillets dry with paper towel.
Place them skin-side down in the baking dish.

Drizzle with olive oil and season with:

  • Salt
  • Black pepper
  • Paprika
  • Garlic powder
  • Dried parsley

Step 3: Make the Lemon Butter

In a small saucepan over medium heat:

1.         Melt the butter

2.         Add the chopped garlic and cook for 1 minute until fragrant

3.         Stir in lemon juice, lemon zest, parsley, and honey

Allow the sauce to simmer gently for another minute.

Step 4: Bake

Pour most of the lemon butter sauce over the salmon, keeping a little aside for serving.

Bake for 18–20 minutes, depending on the thickness of the fillets, until:

  • the salmon flakes easily with a fork
  • and the top is lightly golden.

Step 5: Serve

Drizzle the remaining lemon butter sauce over the salmon before serving.

Serve with:

  • roasted baby potatoes
  • asparagus
  • green beans
  •  rice
  • or a fresh garden salad.

Chef’s Tip

For extra flavour, place the salmon under the grill for the final 2 minutes to create a lightly crisp golden top.
