- Zest of 1 lemon
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon honey (optional for balance)
Method
Step 1: Prepare the Oven
Preheat your oven to 200°C.
Lightly grease a baking dish or line it with baking paper.
Step 2: Season the Salmon
Pat the salmon fillets dry with paper towel.
Place them skin-side down in the baking dish.

- Salt
- Black pepper
- Paprika

- Dried parsley
Step 3: Make the Lemon Butter
In a small saucepan over medium heat:

Allow the sauce to simmer gently for another minute.
Step 4: Bake
Pour most of the lemon butter sauce over the salmon, keeping a little aside for serving.
Bake for 18–20 minutes, depending on the thickness of the fillets, until:
- the salmon flakes easily with a fork
- and the top is lightly golden.
Step 5: Serve
Drizzle the remaining lemon butter sauce over the salmon before serving.
Serve with:
- roasted baby potatoes
- asparagus
- green beans
- rice

Chef’s Tip
For extra flavour, place the salmon under the grill for the final 2 minutes to create a lightly crisp golden top.
