Christmas Salad with Biltong, Cheese & Apples and Jason's Hill Cinsault

Ingredients:
- 100 g biltong, thinly sliced (choose lean or slightly fatty depending on preference)
- 2 medium green apples, thinly sliced or cubed
- 100 g cheddar or gouda cheese, cubed (you can also use feta for a saltier twist)
- 1 cup baby tomatoes, halved
- 2 cups mixed leafy greens (rocket, spinach, butter lettuce, or a combination)
- ½ small red onion, finely sliced
- ¼ cup toasted pecan nuts or almonds (optional, for crunch)
- Salt and black pepper, to taste
Ingredients for the Dressing:
- 3 tbsp olive oil
- 1 tbsp apple cider vinegar (or balsamic vinegar for a sweeter touch)
- 1 tsp honey
- 1 tsp Dijon mustard
- A pinch of salt and pepper
Whisk all ingredients together in a small bowl until smooth and slightly thickened.
Prepare the ingredients:
- Wash and dry the greens, slice the apples and onion, halve the tomatoes, and cube the cheese.
- Assemble the salad:
- In a large salad bowl, layer the greens as the base. Top with apples, tomatoes, onions, cheese cubes, and biltong.
- Add the crunch:
- Sprinkle the toasted nuts over the top for extra texture and festive flair.
- Dress the salad:
- Just before serving, drizzle the dressing over the salad and gently toss to coat everything evenly.
- Serve immediately:
